Marinado perfecto: Deja el caz\u00f3n en el adobo al menos 8 horas, preferiblemente toda la noche. Esto permite que el pescado absorba bien todos los sabores.<\/p><p>2. Rebozado crujiente: Aseg\u00farate de escurrir bien el caz\u00f3n antes de pasarlo por la harina para que el rebozado quede bien adherido y crujiente.<\/p><p>3. Fre\u00edr a la temperatura correcta: El aceite debe estar bien caliente (aproximadamente 180\u00b0C) para que el caz\u00f3n quede dorado y crujiente por fuera y jugoso por dentro.<\/p><p>&nbsp;Pasos:<\/p><p>1. Preparar el adobo: Machaca los dientes de ajo en un mortero junto con una pizca de sal. A\u00f1ade el piment\u00f3n, el comino, el or\u00e9gano y la hoja de laurel desmenuzada. Mezcla bien.<\/p><p>2. Marinar el caz\u00f3n: Coloca los trozos de caz\u00f3n en un recipiente grande. Vierte la mezcla de especias sobre el pescado, asegur\u00e1ndote de que todos los trozos queden bien cubiertos. Rebozar y fre\u00edr: Pasa los trozos de caz\u00f3n por harina de trigo, sacudiendo el exceso. En una sart\u00e9n grande, calienta abundante aceite de oliva a fuego medio-alto.
